For canning (water-bath, high-acid foods)
For water-bath canning of high-acid foods (jams, fruit, pickles, and acidified tomatoes), reach for the Super Jar and Super Terrine lines. The Super Terrine is the line Le Parfait builds for canning. The replaceable rubber seal and stainless steel wire bail pull airtight as the jar cools. Replace the gasket each canning session with a fresh Le Parfait rubber gasket, and follow a tested recipe for the right acidity and processing time.
Common batch sizes:
- 500ml Super Jar (16 oz): small-batch fruit preserves, pickled vegetables, acidified tomatoes.
- 1L Super Jar (32 oz / quart): the workhorse. Tomato sauce, pickles, peaches, applesauce. Pairs with our tomato sauce and preserved tomatoes recipes.
- 1.5L and 2L Super Jar (48 oz / 64 oz): larger preserving projects and bulk pickles.
- 3L Super Jar (96 oz): pantry-scale high-acid storage.
Note: low-acid foods such as plain broth, beans, and vegetables are not safe for water-bath canning. Store those in the fridge or freezer (see storage below), or use a tested pressure-canning recipe and equipment.
For fermentation
The same Super Jars work well for fermenting sauerkraut, kimchi, pickles, and hot sauce. The wire-bail closure lets carbon dioxide escape during active fermentation without admitting oxygen, so no airlock is needed. For most home fermenters:
