Peel the carrots and leave them whole. Cut the ends of the fennel and celeriac and leave them whole.
Cut off the ends of the onions and leave them whole and unpeeled. Cut the garlic head in half through the centre.
Add the water, a good pinch of salt and a few peppercorns. Cook on low heat 45 min.
Set the vegetables aside to eat later. Filter the broth using a cloth and pour into a jar.
Close the jar and sterilize for 1 hour at 100°.
