Ingredients

2.5 kg of ripe tomatoes

2 onions chopped

2-3 garlic cloves

1 bay leaf

Thyme

Parsley
-
Basil or tarragon leaves

1 teaspoon of sugar

Spices (cinnamon, nutmeg, cloves)

1 tablespoon of olive oil

Salt and Pepper to season

Directions
Wash, de-seed and peel the tomatoes. Cut into chunks.
Brown the chopped onions in a drop of olive oil in a frying pan, add the crushed garlic, tomatoes, herbs, spices, sugar. Season with salt and pepper. Simmer gently for about 30 minutes.
Blend.
Begin filling your Le Parfait Super Jars with the tomato sauce, leaving a gap of 2 cm from the brim. Seal tightly and proceed immediately to the heat treatment for 45 minutes at 100°C.
