Preserved Tomatoesby Le Parfait

Peel the tomatoes by blanching them for a minute.
Put a pan of water to boil.
Take two 1.5 litre Le Parfait Super jars and place the tomatoes in them.
Place a jar on the scales and add water up to the line.
Weigh the water and add 2% coarse salt relative to the weight of the water.
Repeat the same operation with the 2nd jar.
Close and immediately proceed with heat treatment for 2 hours at 100 °C.
