The traditional French hot-fill and inversion method uses immediate hot filling and brief inversion for appropriate recipes. U.S. boiling-water processing places filled jars in a boiling-water canner for the recipe's specified time. These methods are not interchangeable. Follow the approved recipe for your jar and closure, and use the processing time and method it specifies.
Use the Le Parfait manufacturer instructions and the exact recipe guidance for the 82 mm twist-lid system. Processing time, acidity, jar preparation and lid condition all matter. Do not publish a universal five- or ten-minute claim until the technical instructions are linked and verified.
