Made with ripe summer peaches, warm cinnamon, and a hint of vanilla, this simple Peach Compote is perfect for topping yogurt, oatmeal, pancakes, waffles, ice cream, or shortcakes. Store it in your favorite Le Parfait jar for an easy breakfast or dessert all week long.
Ingredients

6 ripe peaches, peeled, pitted, and sliced

¼ cup water

¼ cup granulated sugar (or honey, if preferred)

1 tablespoon fresh lemon juice

1 teaspoon vanilla extract

½ teaspoon ground cinnamon

pinch of salt

Directions
Add the peaches, water, sugar, lemon juice, cinnamon, and salt to a medium saucepan.
Bring to a gentle simmer over medium heat, stirring occasionally until the peaches are tender, about 10-12 minutes, and have released some of their juices.
Stir in the vanilla extract and continue cooking for another 2-3 minutes until the compote has thickened slightly while still leaving plenty of peach pieces intact.
Remove from the heat and allow the compote to cool slightly.
Spoon the compote into clean Le Parfait jars. Leave the jars uncovered until the compote has stopped steaming, then cover and refrigerate within two hours.
Store covered in the refrigerator and enjoy within 3-4 days.

Leave the peach skins of for a more rustic texture, if desired.
