Sweet, spicy, and just a little tangy, Cowboy Candy turns fresh jalapeños into an irresistible condiment for burgers, sandwiches, tacos, and more.
Ingredients

1 lb fresh jalapeño peppers

1 ½ cups granulated sugar

¾ cup apple cider vinegar

½ teaspoon turmeric
-
½ teaspoon garlic powder

¼ teaspoon ground ginger

¼ teaspoon mustard seeds

Pinch of salt

Directions
Wearing gloves, wash the jalapeños, remove the stems, and slice the peppers into approximately ¼-inch rounds.
Combine the sugar, apple cider vinegar, turmeric, garlic powder, ginger, mustard seeds, and salt in a medium saucepan. Bring to a boil, stirring until the sugar dissolves.
Add the sliced peppers and return the mixture to a gentle boil. Reduce the heat and simmer for about 4–5 minutes, until the peppers have softened slightly but still hold their shape.
Using a slotted spoon, transfer the jalapeño slices to a clean Le Parfait jar.
Return the remaining liquid to a boil and cook for another 5–8 minutes, until slightly reduced.
Carefully pour the hot syrup over the jalapeños, making sure the peppers are covered. Allow to cool before closing the jar and transferring it to the refrigerator.
Refrigerate for at least 24 hours before serving. They'll become even better after several days.
Recipe Note
Adjust the heat: For milder Cowboy Candy, remove some of the seeds and membranes before slicing. For more heat, leave them intact.
Wear gloves: Jalapeño oils can irritate skin and eyes, so gloves are worth using when you're slicing a pound of peppers.
Serving ideas: Try Cowboy Candy on burgers, pulled pork, tacos, nachos, sandwiches, eggs, pizza, or with cream cheese and crackers.
Save the syrup: Any extra sweet-spicy syrup can be used in dressings, marinades, barbecue sauce, or even cocktails and mocktails.
Storage: Keep refrigerated. This is a refrigerator recipe and is not intended for shelf-stable canning. For shelf-stable Cowboy Candy, a specifically tested canning recipe and its exact processing instructions should be used.
