5 ears fresh sweet corn, kernels removed (about 4 cups)

1 red bell pepper, diced

1 small yellow bell pepper, diced

½ cup finely diced red onion

2 cloves garlic, minced

1 cup apple cider vinegar

⅓ cup granulated sugar

1 tsp kosher salt

½ tsp freshly cracked black pepper

½ tsp mustard seed

Directions
Combine the vinegar, sugar, salt, pepper, celery seed, and mustard seed in a saucepan. Bring to a gentle simmer over medium heat, stirring occasionally, until the sugar dissolves.
Stir in the fresh corn kernels, onion, garlic, diced peppers, and red pepper flakes (if using). Bring the mixture back to a low simmer for 10-12 minutes, just until the vegetables are tender but still crisp and vibrant.
Remove the saucepan from the heat and allow the relish to cool slightly.
Spoon the relish and brine into clean Le Parfait jars and refrigerate until chilled. The flavors continue to develop after a few hours and taste even better the next day.
