Slow-cooked apples, cinnamon and warm spices come together in this simple homemade apple butter—a fall favorite for toast, oatmeal, baking and more.
Ingredients

3 pounds apples, peeled, cored and roughly chopped

½ cup apple cider or apple juice

⅓ cup packed brown sugar

1 tablespoon fresh lemon juice

1½ teaspoons ground cinnamon

¼ teaspoon ground nutmeg

Pinch of salt

1 teaspoon vanilla extract
Directions
Add the apples, apple cider, brown sugar, lemon juice, cinnamon, nutmeg, cloves and salt to a heavy-bottomed saucepan or Dutch oven.
Cover and cook over medium-low heat for about 30 minutes, stirring occasionally, until the apples are very soft and beginning to break down.
Blend the mixture with an immersion blender until completely smooth. Alternatively, carefully transfer it to a blender and blend until smooth, then return it to the pot.
Cook uncovered over low heat for another 45–75 minutes, stirring frequently, until the apple butter is deep brown, thick and spreadable. As it thickens, stir more often to prevent scorching.
Remove from the heat and stir in the vanilla. Let cool before transferring to a clean Le Parfait jar.
